Vast oyster farms and salt marshes stretch across the land, with herons and seagulls swooping around them.
An oyster tasting on Île de Ré should not be missed – not in a restaurant, but rather straight from the producer. Just follow the signs saying “degustation“. Les Huitres des Trousse are located between the marshes in the north of the island and the oysters are served in rustic wood baskets decked out with seaweed. Come for mussels, clams and small crustaceans.
