Angelo Sabatelli worked in Rome, Jakarta, Hong Kong, Shanghai and Mauritius before returning to Puglia to open his eponymous restaurant. Influences from his Asian travels find their way into his menus, but the emphasis is firmly on the wonderful ingredients of his native region. The results are imaginative dishes such as cuttlefish with vanilla and suckling pig perfumed with hibiscus and rose, all at surprisingly reasonable prices. The interior is as sophisticated as the food, and it’s best to book well ahead to guarantee a table.
